Generally, Junmai sake has a high percentage of Ginjo aroma, sweetness, and acidity “Silver" is a sake that seeks a balance between these elements and dares not to be too assertive in its character. It is a sake that can stay with you for a long time at mealtime, even if it does not push too strongly. The rice is polished to 55 whereas it is normally polished to 60 The difference is in the taste.

Hashira Shochu Brewing, brewed with reason and romance!

This sake is brewed using "Koshi tanrei (Niigata, Japan)" rice grown in house and the Hashira Shochu brewing method, which recreates the sake brewing techniques of the Edo Genroku period (1688 - 1868). The robust flavor complements seasonal dishes. Its rich flavor and mouthfeel make it ideal as a sake whole dining.
